The fragrance,....the sweet and warm taste of cinnamon make it a popular spice to use during the winter months. It is, however, available and used throughout the year.
Cinnamon has a long history both as a spice and as a medicine. It is the brown bark of the cinnamon tree. We often refer to its dried tubular form as a stick, but quill is the correct name. .
Cinnamon is one of the oldest spices known. It was mentioned in the Bible and was used in ancient Egypt not only as a beverage flavoring and medicine, but also as an embalming agent.
It was so highly treasured that it was once considered more precious than gold. Cinnamon also received attention in China, which is reflected in its mention in one of the earliest books on Chinese botanical medicine, dated around 2,700 B.C.
Roman Emperor Nero is said to have ordered a year's supply of cinnamon be burned, to show his regret for murdering his wife. At the price of gold, that is heavy remorse.......
Quick And Easy Tips
Simmer cinnamon sticks with milk and honey for a deliciously warming beverage.
Adding ground cinnamon to black beans to be used in burritos or nachos will give them a uniquely delicious taste.
Add a dash or two of cinnamon to pancake batter.
Dust your french toast with cinnamon.
Add ground cinnamon when preparing curries.
Sprinkle cinnamon over your oatmeal or yougurt.
Simmer cinnamon for a fresh and lively scent through out the house.
Add a dash to your hot tea.

Cinnamon improves the body's ability to utilize blood sugar. By enhancing insulin signaling, cinnamon can prevent insulin resistance
Cinnamon's essential oils also qualify it as an "anti-microbial" food, and cinnamon has been studied for its ability to help stop the growth of bacteria as well as fungi.
Cinnamon helps prevent unwanted clumping of blood platelets.
Simply smelling the fragrance boosts brain activity!
Cinnamon also has antiseptic and astringent properties.
Home remedies use cinnamon to combat diarrhea and morning sickness.

Spicy Cinnamon Orange Salad
Ingredients
2 1/2 cups orange sections, cut into 1/2-inch pieces (about 6 small or medium oranges)
( fresh oranges are best, if you do not have them, use Mandarin oranges, well drained)
1/4 cup slivered almonds
2 1/2 tablespoons chopped pitted dates (about 4)
1 tablespoon powdered sugar
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
Preparation
Combine ingredients in a medium bowl, tossing to combine. Cover; chill at least 20 minutes. Garnish with additional cinnamon and and orange rind, or whipped cream.
When you are ready to serve, lay this salad on a bed of your favorite greens for an attractive presentation.

I use it on oatmeal every morning and where I live the chili has a hint of it too. A quill? Huh, never heard that. Good job! Peace!! Tom
A great memorable activity with my students was microwaving apples after we visited an apple orchard. Some students had never been near an open field let alone an orchard. My simple recipe was to core the apple but leave the skin on. Sprinkle the apple with only cinnamon and microwave for about 1minute and a half. The smell was a delight on its own. The students now treasured their finds because they were able to take as many apples as they could carry. Great hub - I love cinnamon, too!
